Miss Katie's Diner Tuna Melt:

Kari Ancevic, Brookfield, asked for the formula for the "best fish dissolve ever" from Miss Katie's Diner, 1900 W. Clybourn St.

She composed: "Without exception, Miss Katie's makes the best fish soften ever — and I lived in New Jersey for some time! I have had a go at including things like wine vinegar and mustard however have not possessed the capacity to repeat it. I would love to get their formula."

Diminish Pitch Piccolo, proprietor, sent the formula, which he said "has been set up by gourmet expert Irene Cawthon for more than 28 years."

Makes 4 to 6 sandwiches (contingent upon size of bread)

2 jars (6 ounces every) white fish in water, depleted well and chipped (see note)

1 tablespoon cleaved red onion

1 tablespoon cleaved celery

1 tablespoon slashed green chime pepper

1 tablespoon slashed red chime pepper

1 tablespoon yellow mustard

½ glass mayonnaise

Juice of ¼ lemon

2 tablespoons sweet pickle savor

Salt and white pepper to taste

Vegetable oil to barbecue sandwiches

8 to 12 bits of entire wheat bread

8 to 12 cuts of Wisconsin cheddar

Blend all fixings aside from vegetable oil, bread and cheddar in a medium bowl, cover and refrigerate overnight.
